How do YOU do turkey?
So, one benefit I do get from my crazy company is a turkey at Thanksgiving...and for some reason they keep getting bigger. Last year it was an 18 pounder...this year? Label says 22.99 lbs!!
I will be cooking it at home on Wednesday, to be served elsewhere on Thursday. So, while I'm still thinking thru cooking that large a bird and not thoroughly drying it out...and how best to prepare a broth to reheat it...it got me thinking it might be fun just to ask.... How do YOU do turkey? Do you have a favorite way to do it? Tips you'd like to share? Or is your favorite way to do turkey just 'with all the trimmings until I'm stuffed and watching football'...

I'm pretty confident my last words will be 'well crap, that didn't work'. Of all the things I've lost over the years, I think I miss my metabolism most of all. Nachos are just tacos that don't have their s_it together. I'm not adding this year to my age because I really didn't use it. Ever notice that extra fries and exercise sound a lot alike? |

deep fry.......never had any turkey anywhere that tasted better. Stays nice and juicy...............

Smoked.
I've smoked Thanksgiving turkey for several years now and it is delicious. The skin is nice and crispy, sealing in the juices. When you reheat, the smoky flavor is still preserved. I generously season with sea salt and lemon and pepper seasoning. I use only hardwood charcoal and probably use some cherrywood for this year. Deep fried turkey is good, no question there but my family requests for the smoked turkey over the deep fried version so I oblige...they love the crispy skin and the turkey noodle soup that is made from the left overs. |

23 lbs is a big bird. You may be right to worry about it getting dry. I would follow my Foodie Godfather's advice. Brine the bird.

We do on our Weber gas grill. But yes Rich, deep fry is the best.

I've grilled 'em before....but this bastid is too big, no chance at any kind of indirect heating..........plus, dunno I feel like doing it in 20 degree weather
I've thought about butterflying it or even just fully cutting it in half and using a different recipe on each half....but in the end I'll likely just bake it with a nice dry rub and maybe a glaze towards the end
